Sodium citrate, also known as trisodium citrate or citric acid trisodium salt, is an organic compound with the chemical formula C₆H₅Na₃O₇, soluble in water and glycerin, insoluble in ethanol, and an aqueous solution with a slightly alkaline pH. Sodium citrate E331 is a food additive. Food additive sodium citrate is used to enhance flavor and maintain the stability of active ingredients in food and beverages. In the detergent industry, it can replace sodium tripolyphosphate as a kind of safe detergent. Sodium citrate powder can also be used in fermentation, injection, photography, and metal plating.
